Peel and cut into sticks, pineapple and palmito, finely chop red onion, do the same with red bell pepper and mix lightly.
The chicken breast is boiled in water with vegetables, then removed, left to cool, make strands with a fork and will be added to the pan where we put the BBQ sauce, salt, pepper and leave for a few minutes. Then add the pineapple. Finely chop the raw mushrooms and add them as well.
Prepare the lemon dressing with honey, salt and pepper and taste if it is too acidic, you can add an extra teaspoon of honey.
Add lettuce and mix lightly.
At the end, add cilantro and bicolor sesame, as in the pictures below.
