  • 2 very ripe bananas, mashed
  • 4 tablespoons apple sauce or purée
  • 5 tablespoons skimmed milk
  • 1 tablespoon olive oil
  • 1 tablespoon vanilla extract
  • 225g (8 oz) plain flour
  • 1 dessertspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 30g (1 oz) chopped walnuts

  1. Preheat oven to 160 C / Gas mark 3. Line a loaf tin with baking parchment, and lightly dust with flour.
  2. In a large bowl, beat eggs and sugar until light and fluffy, about 5 minutes. Beat in bananas, apple sauce, milk, oil and vanilla.
  3. In a separate bowl, sift together flour, baking powder, bicarbonate of soda and salt. Stir flour mixture into banana mixture, mixing just until blended. Fold in walnuts. Pour batter into prepared pan.
  4. Bake in preheated oven until golden and a cocktail stick inserted into centre of the loaf comes out clean, about 1 hour. Turn bread out onto a wire rack and let cool.

AROUND THE WORLD

Banana cake isn’t just a classic American dessert, it comes in a lot of different shapes and sizes and is a beloved treat all around the world (maybe not with the same cream cheese frosting).

How To Store Banana Cake:

So don’t worry if you accidentally left the cake out last night, it will still be fine. If you frost the cake with the icing it must be refrigerated since it contains both cream cheese and yogurt.
  • Store: your cake will be fine in the fridge for up to 4 days.
  • Freeze: in an airtight container, you can freeze cake for 4 months. When thawing the yogurt in the frosting may cause it to break, so if you know you will be freezing part of this cake I recommend leaving it unfrosted.

Banana Walnut Cake

Preheat the oven to 350° F. Generously grease a 9吉-inch baking pan.

In a medium bowl, combine the flour, baking soda, salt, cinnamon. Set aside.

Using an electric mixer, beat the butter and sugars on medium-high speed until light and fluffy, about 3 minutes.

Add the vanilla extract and then the eggs, one at a time.

On low speed, beat in half the dry ingredients then the bananas, sour cream, and milk. Beat in the remaining dry ingredients. Gently stir in the walnuts.

Pour the batter into the prepared pan and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.

Unfrosted cake can be well wrapped and frozen for up to 2 months. Thaw at room temperature before frosting.

Cream Cheese Frosting

In the bowl of an electric mixer, beat the cream cheese, butter, and vanilla extract on medium-high speed until very light, creamy, and smooth.

On low speed, gradually add in the sugar and beat until fluffy.

Spread the frosting over the cooled cake. Garnish with chopped walnuts. For cleaner cuts, refrigerate for 30 minutes before slicing and serving. The cake can be stored in the refrigerator for up to three days. Serve at room temperature.


Banana Walnut Crumb Cake

Preheat oven to 350° F. Spray a 13࡯ baking pan with nonstick spray.

Combine the brown sugar, granulated sugar, flour, salt, cinnamon and walnuts in a medium bowl.

Pour the melted butter over the mixture and use a rubber spatula or the back of a fork to crumble the topping together. Set aside.

Whisk together flour, baking powder, cinnamon and salt in a medium bowl. Set aside.

Beat butter and sugar together in bowl of electric mixer until blended. Add mashed bananas and beat until just combined. Add eggs and vanilla extract and beat until combined.

Stir in the dry ingredients and milk alternately, beginning and ending with the milk. Pour half of the cake batter into the baking pan.

Sprinkle with half of crumb topping, then pour the remaining batter on top. Finish with the remaining crumble topping.

Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Cover cake with aluminum if top begins browning too much. Remove the cake from oven, and cool on wire rack 20 minutes before glazing.

GLAZE

Whisk together powdered sugar with vanilla extract and milk.

Add more powdered sugar if you want a thicker glaze or more milk for a thinner glaze. Drizzle over the top of cake. Cut into squares and serve.


THERMOMIX ® RECIPE

Add eggs and sugar to TM with butterfly added and beat on speed 4 until light and fluffy (about 2 minutes).

In a small bowl add apple sauce and bi-carb soda, mixing until it reacts (this gives air to your mixture).

Remove butterfly and add the apple bi-carb mix, halved bananas, milk, oil and vanilla essence to TM bowl. Mix on speed 5 for 30 seconds - 1 minute until all ingrediants are mixed well. If bananas were not ripe enough you may need to increase speed to 6-7 to blend properly.

Sift Flour into TM, then add Salt and Baking Soda. Blend speed 4 for 1 minute.

Fold in walnuts (break into smaller pieces) leaving some to scatter on top.

Pour into pre-lined baking tin, sprinkle with reserved Walnuts and bake in pre-heated oven for 45 minutes. Check with skewer to see if further 5 minutes is needed.

Carefully remove from loaf pan onto wire rack and serve hot or cold! Enjoy

What makes this bread so special is the use of greek yogurt in the batter. This makes the bread ultra-decadent and helps it stay moist past the first day it is baked. Not to get too science-y, but greek yogurt also helps activate the baking soda in the batter. This process creates a nice, fluffy bread that doesn’t skimp on moisture!

Using overripe bananas also lends to the moistness of this cake. Make sure your bananas are nearly or all black before you use them for this cake. The darker the skin, the sweeter the banana pulp will be. Trust me, it makes all the difference!

  • ⅓ cup walnuts, chopped
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground allspice
  • 2 cups reduced-fat milk
  • ¾ cup low-fat plain yogurt
  • 2 tablespoons canola oil
  • ¼ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large banana, halved lengthwise and sliced
  • ⅓ cup raisins

Preheat oven to 375 degrees F. Coat an 8-inch-square baking dish with cooking spray.

Mix oats, walnuts, cinnamon, baking powder, salt and allspice in a large bowl. Combine milk, yogurt, oil, brown sugar and vanilla in a medium bowl. Add the milk mixture to the dry ingredients stir until completely incorporated. Stir in bananas and raisins. Pour the mixture into the prepared baking dish.

There’s just something, dare I say, All-American?, about a freshly baked loaf of banana bread. It’s comfort food at it’s finest.

We usually eat our bananas before they even lose all their green coloring, but on the rare occasion we don’t, I look forward to making banana bread every time.

While we love the classic banana bread, after trying to lose weight after each baby, I knew I wanted a banana bread with less fat.

This recipe uses absolutely NO butter, but you don’t lose any of the flavor or moisture.

How to make low fat banana bread

Step 1: In a medium bowl combine eggs, mashed banana, sugar, and applesauce.

Step 2: Add flour, baking powder, baking soda, salt, cinnamon, nutmeg, and nuts and mix well.

Step 3: Pour batter into a greased 9࡫″ loaf pan and bake at 350 degrees for 55 to 60 minutes, until a toothpick inserted in the center comes out clean.

Want to make two loaves? This recipe will fill two pans that are 7 1/2 x 3 1/2 x 2 inches. Bake them at the same temperature for 40 to 45 minutes.

You can also make them into muffins (see directions below).

YES! To make this recipe into muffins, spray muffin tins with nonstick cooking spray, and fill about 2/3 of the way full.

This recipe will yield about 20-24 muffins (depending on how full you fill the muffin tins).

Bake at 375 degrees for 20-22 minutes, until a toothpick inserted in the center comes out clean.

Don’t have ripe bananas?

NO PROBLEM! You can ripen a banana quickly by baking them in the oven or microwaving them.

With the peels still on, place them on a foil-lined baking sheet and bake at 350 degrees for about 15 minutes until they are blackened. Let them cool, then scoop the bananas from the peels and use them in your recipe.

With the peels off, place them in a microwave-safe bowl and heat them for about 30 seconds to soften them. Use them in the recipe as usual.

How to store

Banana bread is best stored covered in plastic wrap or foil. It can sit at room temperature for 2-3 days, or refrigerated for up to a week.

To freeze, we like to cut it into slices and individually wrap each slice in plastic wrap, then place the slices in a large, resealable ziploc freezer bag.

That way, we can grab them and go when we’re on the run out the door as a quick snack or breakfast in a pinch.
