Peel a squash, grate it and put it in a cold bowl. Grilled vegetable skewers. Recipe

Use the same vegetables, plus whatever you like. In addition, you need dressing ingredients.

  • The juice of half a lemon
  • 70 ml of olive oil
  • A few basil leaves
  • A teaspoon of oregano
  • 2-3 cloves of garlic
  • Salt and pepper to taste.

For the dressing we need a tall glass in which he puts lemon juice, olive oil, salt, pepper, oregano, basil and peeled garlic. Using a vertical blender we will mix until we get an emulsion.

We stick the vegetables alternating on the skewer sticks, grease them with half of the dressing and let them sit for half an hour.

  • 1 small yellow squash, cut into 1/4 inch pieces
  • 1 Bermuda onion
  • 4 caps of mushrooms
  • 1 red pepper, cut into 8 pieces
  • 1 Japanese eggplant, cut into 1/4 inch slices
  • 3 tablespoons / 45 ml olive oil
  • 2 tablespoons / 30 ml red wine vinegar
  • juice of 1 lemon
  • 1 tablespoon / 15 ml Dijon mustard
  • 1 tablespoon / 15 ml cut
  • fresh basil
  • 1 tablespoon / 15 ml freshly chopped parsley
  • 2 cloves garlic, chopped
  • 1/2 teaspoon / 2.5 ml salt
  • 1/2 teaspoon / 2.5 ml black pepper

Mix together in a small bowl olive oil, vinegar, lemon juice, mustard, basil, parsley, garlic, salt and black pepper. Put the chopped vegetables in a resealed plastic bag. Pour the marinade over the vegetables, discard and seal the bag. Let stand in the refrigerator for 1-3 hours.

Preheat the grill. Put the vegetables on the skewer alternating as you go. Reserve the marinade to brush the vegetables while cooking. Place the kebabs on a medium flame and cover.

Cook for 10-12 minutes, brush with marinade every 2-3 minutes. Remove from the grill when the vegetables are brown and delicate. Serve as a side of grilled meat, as appetizers, or wrapped in a heated pita.

-1/2 red bell peppers
-5-6 cauliflower bouquets

Method of preparation:

I want to tell you something about this function, because I tested it on this recipe. It is ideal for those who want to eat healthier and want to keep the taste of vegetables. Very useful for mothers, who want to feed the little ones as healthy as possible.

Any kind of fish can be used for this recipe, I opted for trout. I used a 450 gr bag of frozen beans in the bag, but it can also be prepared with fresh beans. Also, carrots can be of any shape or size, they can be cut or left whole.
